Recipe: BBQ Chicken & Cornbread - Crockpot Style

Seriously besides a sandwich of some sort this has to be the easiest meal we have made in a long while... and it was SO good!

I am going to make some meals in a bag for this next time, simply put the ingredients for each portion together all at one time.  I figure I can make up 2-3 of these and keep it in the pantry ready to go!  Talk about a quick dinner.

BBQ Chicken Portion:

2 1/2 cups THRIVE Freeze Dried Chopped Chicken
1/2 cup THRIVE Sweet Potatoes
1/2 cup THRIVE Freeze-Dried Sweet Corn
1/4 cup THRIVE Freeze-Dried Chopped Onion
3 1/2 cups water
3/4 - 1 bottle of favorite BBQ Sauce (18 oz size)

Corn Bread Portion:

1/4 cup THRIVE Butter Powder
1/4 cup THRIVE Sugar
1/3 cup THRIVE Freeze Dried Sweet Corn
1 TBSP THRIVE Instant Milk
2 TBSP THRIVE Whole Egg Powder
1/8 tsp THRIVE Salt
1 cup THRIVE White Flour
2 tsp THRIVE Baking Powder
1/2 cup THRIVE Cornmeal
1 cup & 2 TBSP Water
1/2 cup THRIVE Freeze Dried Cheese - Colby worked great but any combination would do

Directions:
Mix all the BBQ Chicken portion ingredients right in the bottom of your crockpot (5-6 qt crockpot will work best)

Mix all of the Corn bread Portion ingredients in a mixing bowl.  Spoon over the top of the BBQ Chicken already in the crockpot.  Carefully smooth it out the best you can so the whole top is covered.  Place lid on the crockpot and cook 6 hours on low.  If you like your cornbread to brown up - turn it to high the last 30 minutes or so (totally not necessary).

Notes: I ended up cooking ours for about 8 hours and it turned out just fine - love how forgiving crockpots are!
